Here’s an old family recipe from a new friend. These delicious latkes have become a holiday staple in my house and I hope you enjoy them as well.  What I love most, and what I think you’ll really enjoy, is the creative addition of apples for a touch of sweet that accents the starchy potatoes well. Tunkel Family Latkes


6 potatoes, grated

1 onion, grated

1 apple, peeled & grated

2 large eggs beaten

½ cup matzo meal

1 tsp salt

¾ tsp sugar

½ cup oil to fry in


Grate/julienne/shred potatoes & apple. Squeeze out all of the water. Grate the onion. Add eggs, matzo meal, salt and sugar. Mix.

Pat out your latkes so they’re thin. Fry in oil until golden brown. Turn each pancake over once. Drain on a paper bag or paper towel. Makes about 18 latkes.
