gravlaxTo serve, use your favorite bagel, toasted or soft, spread your cream cheese mixture evenly on both halves, top with as many paper thin slices of your homemade Gravlax, cracked black pepper, and pickled red onions.

Salmon

Ingredients

  • 2 cups sea salt
  • 2 tablespoons whole black pepper corns
  • 1 tablespoon coriander seed
  • 1 tablespoon garlic powder
  • 1 cup sugar
  • 2 tablespoons orange zest about 2 oranges
  • 1 side salmon fillet, skin on, bones removed, rinse, and pat dry

Method

  1. Combine all dry spices and mix well (include zest)
  2. Lay a piece of plastic wrap triple the size of the salmon on a half sheet pan. Place the salmon in the center of the pieces of plastic wrap, with the skin side down. Empty the seasoning mixture over the top and sides of the salmon. Use your fingers and spread the mixture evenly. Do not allow any part of the flesh of the fish to be exposed. Fold the additional plastic up and around the side of the salmon, folding in the ends securely. Wrap the salmon the entire salmon again with another layer of plastic wrap.
  3. Place the wrapped salmon on the half sheet pan. Top the salmon with another half sheet pan. Place evenly weighted objects on either end and in the middle of the sheet tray, for a total of about 8 #’s. Refrigerate for 30 hours. Remove and unwrap the salmon, scrape off the seasoning mixture. Rinse the salmon under cold water. And carefully dry. Your Salmon is ready to serve, slice paper thin on an angle.
Cream Cheese Mixture

Ingredients

  • 1 – 8oz. Block of Cream Cheese
  • 8 Large Chopped Strawberries ( fresh )
  • 6-8 Chives or 4-6 Scallions, thin sliced
  • 4 Tablespoons Honey
  • Kosher Salt to Taste
  • 1- Teaspoon Vanilla Extract

Method

  1. Combine all the ingredients with room temperature cream cheese in a kitchen aid mixer, with either the paddle attachment or the whisk. It will be easier if you start with the paddle and as the ingredients begin to incorporate you switch to the whisk. Whisk on medium until the mixture has increased its volume by 1/3, please wait to include your salt until you have completely mixed the cream cheese mixture. Then taste and fold the salt into your spreadable cheese.
Pickled Red Onions

Ingredients

  • 1 Large Red Onion
  • ½ cup of Champagne Vinegar
  • ½ Cup of Light Brown Sugar

Method

  1. With a very sharp knife or a Japanese mandolin, make paper thin slices of red onion, use the entire onion after removing the root and peel, cut your onion on half, cutting with the layers, this will allow you a flat surface for slicing.
  2. In a small sauce pot on medium low heat, add your onions, vinegar, and sugar all at once while cold. Slowly combine the onion mixture, and bring to a low simmer. Your goal will be to reduce the liquid from the sugar and vinegar to create a Gastrique with your red onion, the consistency should be like maple syrup, or to coat the back of a spoon. Once your liquid has reduced, remove from the heat and spread out on a large dinner plate evenly, and refrigerate until fully cooled.
