Ben’s Pizza Dough

Yield: 12 pizza dough balls

Ingredients

  • 7 1/2 lbs all purpose flour
  • 7 1/2 cups water, tepid
  • 3/4 oz fresh yeast
  • 1 1/2 oz salt
  • 1 3/4 oz honey
  • 3 3/4 oz olive oil

Method

  1. All flour in mixing bowl with dough hook.
  2. Add yeast to 1 1/2 cups water and dissolve. Add yeast water to flour. Hook dough on #1.
  3. Add the rest of the ingredients together in a mixing cup. Mix thoroughly and pour into flour mixture. Hook on #1 for 2 minutes. Hook on #2 for 9 minutes.
  4. Remove the dough from bowl and place on counter. Using the scale, cut into 6 ounce portions and roll portions into dough balls.
  5. Spray large sheet pans with non-stick spray and arrange balls in 3 x 4 rows. Spray coating on top of each dough ball to prevent from drying out. Cover with plastic and refrigerate.
