This is another one that was inspired by my recent culinary journey to Puerto Rico. Sofrito is the dead giveaway here as it’s a culinary mainstay of authentic Puerto Rican dishes and a new favorite of mine.


Asada Cauliflower

Step One:

1 Head Cauliflower

1 teaspoon of kosher salt

1 teaspoon of grape-seed oil

Rub the exterior of the raw cauliflower with salt and grape-seed oil, steam the cauliflower covered for 12-15 minutes, until fork tender. Remove the cauliflower from the steamer, and chill in the refrigerator.


Step Two: Prepare the Sofrito

8 garlic cloves, minced

1 cup extra-virgin oil

4 cups yellow onions, minced

½ teaspoon dried thyme

½ teaspoon dried rosemary

½ teaspoon dried bay leaf

8 ounces pureed canned tomato puree

1 tsp salt



In a food processor add the tomato puree, garlic, thyme, rosemary, salt and bay leaf. Mix on high for one minute until all of the ingredients are well blended and incorporated. Turn the speed to low and drizzle in ½ a cup of extra virgin olive oil.

Pre-heat a medium sized skillet to medium-high. Add the remaining ½ cup of olive oil, and the minced onions. Cook the onions until translucent after 7-10. Pour in the blended aromatic mixture and cook for 15 minutes on low. Allow the mixture to cool, and re-season to taste with salt and pepper.

Step 3:

Slice the Cauliflower lengthwise from top to bottom ½ inch thick. Cross sections of the entire head of cauliflower.

Add the cauliflower to a deep glass casserole dish and pour the sofrito over the cauliflower and allow to marinade for 2 hours at room temperature

Prepare the Grill:

After the grill has been prepared, wipe clean with an oiled towel, and grill each side of the cauliflower for 4-6 minutes.

Served immediately, use the remaining sofrito marinade as a sauce, or dressing for the heavenly cauliflower.
