20-Minute Preserved Lemons

Ingredients

  • 24 lemons cut into quarters three-quarters of the way through lengthwise keeping lemon together at bottom
  • 6 cups water
  • 2 cups sugar
  • 1 cup kosher salt
  • 20 to 30 black peppercorns
  • 8 to 10 sprigs thyme
  • 2 shallots
  • 2 bay leaves
  • 1/2 teaspoon red chili flakes

Method

  1. Place all ingredients in large saucepan, bring to a boil.
  2. Simmer 2-3 minutes, remove from pot and allow mixture to cool. Refrigerate.
